So this is what I've been doing to my drinking water every day... yup, setting it out in the sun. It sounds SO ridiculous and woo-woo, I know. But what the sun is actually doing is helping structure my water. Let’s talk about what the heck that means! What is structured water?The water inside your cells isn't the same as the water coming out of your tap. In your body, water exists in a gel-like state called structured water (you might also hear it called EZ, or exclusion zone water). The molecules line up into an organized pattern instead of bouncing around randomly. That structure gives the water a slight negative charge, and that charge helps your cells push out toxins, keep their membranes working, produce energy and communicate with each other. You can compare it to the difference between a well-organized team and a chaotic crowd - it’s the same people, but the end result is totally different. When water loses that structure (from stress, processed foods, tap water chemicals, not enough sunlight), it has negative effects. It causes detox to slow, energy dips, and inflammation can start to increase. How sun structures waterSunlight, especially its infrared and red wavelengths, is one of the most powerful things that builds structured water... both out in nature and inside you! When light hits water, it energizes the molecules and helps them organize into that protective layer. This is why spring water and moving water in nature are way more structured than water sitting in a plastic bottle. And it's happening inside your body too. Sun exposure isn't just about vitamin D - it's literally helping the water in your cells do its job! My jars out in the sunSetting water out in direct sun (or making a sun tea) is one of the easiest ways to bring more structured water into your day. The light begins to organize the molecules the same way it does in nature. You can add herbs to bring in extra polyphenols and plant compounds too. Here's how I do it:

Make sure to use glassChemicals can leach when plastic heats up in the sun, and glass is cleaner and more inert, so it doesn't interfere with the water or the light. Wide-mouth mason jars or glass sun tea jugs both work great. To summarize…Structured water is foundational... it helps your energy, your detox and your cellular health. And supporting it is super simple! Get outside in the sun, drink spring or mineral water, eat hydrating whole foods, and make a little jar of sun water/tea now and then. Your body is mostly water.
